Fresh Fruit Tart with Vanilla Pastry Cream: Easy 8 Slices

This fresh fruit tart is the dessert I make when I want something that looks like it came from a French bakery. It starts with a buttery press-in crust, gets filled with a silky vanilla pastry cream and is finished with rings of strawberries, kiwi and blueberries brushed with a glossy apricot glaze. Every slice has crunch, creaminess and bright, juicy fruit.

It looks fancy, but it’s really just three simple parts. You can make the crust and pastry cream a day ahead, then put it all together in about 15 minutes. The whole tart costs me about $10, much less than one from a bakery.

What Makes a Great Fresh Fruit Tart?

A classic French fruit tart has three layers, and each needs to be right. The crust should be crisp and buttery, sturdy enough to slice but tender enough to break with a fork. The pastry cream, called creme patissiere, should be thick, smooth and full of vanilla flavor without tasting eggy. The fruit on top should be ripe, colorful and dry so it doesn’t weep into the cream. A thin glaze of warm apricot jam gives the fruit that shiny bakery look and keeps it fresh for hours. When all three come together, a fresh fruit tart tastes cool, creamy and light, which is why it’s such a favorite for summer parties and birthdays.

Why You’ll Love This Recipe

  • No rolling pin. The crust presses right into the pan.
  • Make ahead. Crust and cream keep for a day, so assembly is quick.
  • Beautiful. It’s a real centerpiece for celebrations.
  • Flexible. Use whatever fruit is in season.
  • Classic flavor. Vanilla, butter and fresh fruit are hard to beat.

Ingredients for a Fresh Fruit Tart

You’ll need a 9-inch tart pan with a removable bottom. It makes it easy to lift the tart out for serving.

For the Press-In Crust

  • 1 1/4 cups all-purpose flour (160g)
  • 1/3 cup powdered sugar (40g)
  • 1/4 teaspoon salt (1g)
  • 1/2 cup cold unsalted butter, cubed (113g)
  • 1 large egg yolk
  • 1 tablespoon cold water (15ml)

For the Vanilla Pastry Cream

  • 1 1/2 cups whole milk (360ml)
  • 4 large egg yolks
  • 1/3 cup granulated sugar (67g)
  • 3 tablespoons cornstarch (24g)
  • 2 tablespoons unsalted butter (28g)
  • 2 teaspoons vanilla extract or 1 vanilla bean (10ml)

For the Fruit Topping

  • 1 1/2 cups strawberries, hulled and halved (220g)
  • 2 kiwis, peeled and sliced
  • 1 cup blueberries (150g)
  • 1/2 cup raspberries or green grapes (65g)
  • 3 tablespoons apricot jam, warmed with 1 teaspoon water (60g)

Ingredient Notes

Butter: Keep it cold for the crust. Cold butter makes a tender, crumbly texture.

Whole milk: It makes the richest pastry cream. Two percent works, but the cream will be a little less silky.

Cornstarch: It thickens the cream and keeps it stable for slicing.

Fruit: Pick firm, ripe fruit. Strawberries, kiwi, blueberries, raspberries, mandarin segments and grapes all hold up well. Avoid bananas and apples, which brown.

Apricot jam: It’s the classic glaze because its color doesn’t hide the fruit. Strain it if it’s chunky.

How to Make a Fresh Fruit Tart

  1. Make the Crust Dough. Pulse the flour, powdered sugar and salt in a food processor. Add the cold butter and pulse until it looks like coarse sand. Add the yolk and water and pulse until the dough clumps.
  2. Press into the Pan. Press the dough evenly into a 9-inch tart pan with a removable bottom, pushing it up the sides. Prick the base with a fork and freeze for 15 minutes.
  3. Bake the Crust. Bake at 375F (190C) for 18 to 22 minutes until golden all over. If the center puffs, gently press it down with the back of a spoon. Cool completely.
  4. Heat the Milk. Warm the milk in a saucepan over medium heat until it steams and small bubbles form at the edges.
  5. Temper the Yolks. Whisk the yolks, sugar and cornstarch in a bowl until pale. Slowly pour in half the hot milk while whisking, then pour everything back into the pan.
  6. Cook the Cream. Whisk constantly over medium heat until the cream thickens and bubbles for a full minute, about 3 to 4 minutes. Remove from heat and whisk in the butter and vanilla.
  7. Chill. Press the pastry cream through a strainer into a bowl, cover with plastic wrap touching the surface and chill for at least 2 hours.
  8. Assemble. Whisk the cold pastry cream until smooth and spread it into the cooled crust. Arrange the fruit on top in rings or a loose pattern.
  9. Glaze and Set. Brush the fruit with the warm apricot jam. Chill the tart for 1 hour before slicing.

How to Make Perfect Vanilla Pastry Cream

Pastry cream can seem intimidating, but it’s really just a stirred custard thickened with cornstarch. The key is to keep whisking. Once the mixture goes back into the pan, it will look thin for a couple of minutes and then suddenly thicken. Don’t stop there. Keep whisking until large bubbles break the surface and let it bubble for a full minute. That cooks out the starchy taste and makes sure the cream sets firmly enough to slice. Straining it removes any small cooked egg bits for a perfectly smooth texture. Press plastic wrap directly onto the surface while it cools so it doesn’t form a skin. Cold pastry cream will look firm and lumpy, so whisk it for 30 seconds before spreading and it will turn silky again.

Tips for the Best Fresh Fruit Tart

Bake the crust fully. A pale crust turns soft under the cream. Look for an even golden color.

Cool everything first. Warm cream on a warm crust makes a soggy tart. Both must be completely cool.

Dry your fruit. After rinsing, lay the fruit on paper towels so extra water doesn’t run into the cream.

Start from the outside. Place the first ring of fruit along the edge and work toward the center.

Slice with a hot knife. Dip a sharp knife in hot water and wipe it between cuts for clean slices.

Fruit Ideas by Season

A fresh fruit tart changes with the calendar, which is part of the fun. In summer, I use strawberries, blueberries, raspberries and sliced peaches. In fall, try figs, grapes, pears poached until just tender and pomegranate seeds. In winter, citrus segments, kiwi and mango keep it bright when berries are expensive. For spring, rhubarb compote under the fruit and fresh strawberries on top is lovely. You don’t need many kinds of fruit. Two or three colors arranged in neat rings look just as striking as a rainbow.

Easy Variations

  • Cream cheese filling: Beat 8 ounces of cream cheese with 1/2 cup powdered sugar and 1/2 cup whipped cream instead of making pastry cream.
  • Chocolate: Brush the cooled crust with melted chocolate before adding the cream to keep it crisp longer.
  • Mini tarts: Press the dough into a muffin pan and bake for 12 to 14 minutes.
  • Lemon: Add 1 teaspoon of lemon zest to the pastry cream.
  • Shortcut: Use a store-bought pie crust and instant vanilla pudding made with 1 1/2 cups milk.

The pastry cream in a fresh fruit tart uses egg yolks, so make sure it bubbles and thickens fully on the stove. The FDA’s guide to egg safety explains why cooking egg dishes all the way matters.

What This Recipe Costs

Here’s what I paid this fall: flour, sugar and cornstarch $0.80, butter $2.10, eggs $1.40, milk $0.60, vanilla $0.70, strawberries $2.50, kiwis $1.00, blueberries $1.50, jam $0.30. That’s about $10.90 for a fresh fruit tart that serves 8, or roughly $1.36 a slice.

What to Serve with It

A fresh fruit tart is the star of any dessert table. For a fruity spread, set it next to my caramel apple fruit pizza and a plate of my blackberry crumble bars. A pot of coffee or iced tea is all you need on the side.

Storage

Fridge: Store an assembled fresh fruit tart, loosely covered, for up to 2 days. The crust softens a bit over time.

Make ahead: Bake the crust up to 2 days ahead and store it at room temperature. Make the pastry cream up to 3 days ahead and chill.

Freezing: Don’t freeze the assembled tart. The fruit and cream turn watery.

Frequently Asked Questions

How far ahead can I make a fresh fruit tart?

Assemble it up to 8 hours before serving for the crispest crust. The parts can be made 1 to 3 days ahead.

Why is my pastry cream runny?

It wasn’t cooked long enough. It needs to bubble for a full minute to set properly.

Can I use frozen fruit?

Frozen fruit releases too much juice. Use fresh fruit for the top.

Do I need a tart pan?

It’s best for clean edges, but a 9-inch pie plate works too. Serve straight from the dish.

What can I use instead of apricot jam?

Apple jelly or a mix of honey and water both make a nice glaze.
