Spinach Feta Puff Pastry Bites: Easy 24-Piece Appetizer

These spinach feta puff pastry bites are my answer to every party invite that says bring an appetizer. Little squares of store-bought puff pastry get pressed into a mini muffin pan, filled with a creamy mix of garlicky spinach, salty feta and cream cheese, and baked until the corners puff up crisp and golden. They taste like tiny spanakopita, without any phyllo to wrestle with.

The whole batch takes about 28 minutes, makes 24 bites and costs me around $8. That’s roughly 33 cents a bite, and they always disappear before anything else on the table.

  • Vegetarian. A meatless appetizer that everyone enjoys.

What Makes Spinach Feta Puff Pastry Bites So Good?

The classic Greek pairing of spinach and feta is hard to beat. Spinach brings a fresh, slightly earthy flavor, while feta adds a salty tang that keeps every bite interesting. On its own, feta is crumbly, so I mix it with a few ounces of cream cheese and an egg. That turns the filling into something creamy that holds together and sets as it bakes, instead of drying out. A little green onion, garlic, dill and lemon zest give the filling a bright, herby taste, and a pinch of nutmeg makes the spinach taste even more savory. Puff pastry is the easy shortcut here. It bakes into dozens of buttery layers that shatter when you bite in, which makes these spinach feta puff pastry bites feel special even though they come together so fast.

Ingredients for Spinach Feta Puff Pastry Bites

You’ll need a 24-cup mini muffin pan, a skillet and a mixing bowl.

For the Filling

  • 5 ounces fresh baby spinach, or 5 ounces frozen chopped spinach, thawed and squeezed dry (140g)
  • 1 tablespoon olive oil
  • 2 green onions, thinly sliced
  • 2 garlic cloves, minced
  • 3/4 cup crumbled feta cheese (100g)
  • 3 ounces cream cheese, softened (85g)
  • 1 large egg (most for the filling, a little for brushing)
  • 1 teaspoon dried dill or 1 tablespoon fresh dill
  • 1/2 teaspoon lemon zest, black pepper and a pinch of nutmeg

For the Pastry

  • 1 sheet frozen puff pastry, thawed (about 245g)
  • 1 tablespoon flour, for dusting
  • 1 teaspoon sesame seeds, optional

Ingredient Notes

Spinach: Fresh baby spinach is easy to wilt, and frozen chopped spinach is even cheaper. Whichever you use, squeeze out every drop of water you can.

Feta: Buy a block in brine and crumble it yourself for the best flavor. Pre-crumbled feta works but is a little drier.

Cream cheese: It makes the filling creamy and helps it hold together. Ricotta is a good swap.

Puff pastry: Thaw it in the fridge overnight so it stays cold and flaky.

Dill: Dried dill is fine. Fresh dill or parsley gives a brighter flavor.

How to Make Spinach Feta Puff Pastry Bites

  1. Heat the Oven. Heat the oven to 400F (200C). Lightly grease a 24-cup mini muffin pan.
  2. Cook the Spinach. Warm the olive oil in a skillet over medium heat. Add the green onions and garlic for 1 minute, then add the spinach and stir until fully wilted, 2 to 3 minutes. Transfer to a strainer and press out as much liquid as you can. Let it cool for a few minutes.
  3. Make the Filling. Beat the egg in a small cup and set 1 tablespoon aside for brushing. In a bowl, mix the cream cheese, feta, the rest of the egg, dill, lemon zest, pepper and nutmeg. Chop the spinach and fold it in.
  4. Cut the Pastry. Unfold the puff pastry on a lightly floured surface and roll it gently into a 12×12-inch square. Cut it into 24 small squares, about 2×3 inches each.
  5. Fill the Cups. Press each square into a mini muffin cup so the corners stand up. Add a heaping teaspoon of filling to each one.
  6. Brush. Brush the pastry corners with the reserved egg and sprinkle with sesame seeds if you like.
  7. Bake. Bake for 15 to 18 minutes, until the pastry is puffed and deep golden and the filling is set. Cool in the pan for 5 minutes, then lift the bites out with a small knife.

Tips for Crisp, Golden Bites

Squeeze the spinach dry. This is the biggest secret. Wet spinach makes the pastry soggy and the filling watery. Press it in a strainer or twist it in a clean kitchen towel.

Keep the pastry cold. If it starts to feel soft or sticky, chill the cut squares for 10 minutes before filling.

Don’t overfill. A heaping teaspoon is plenty. Too much filling bubbles over and keeps the pastry from puffing.

Bake until deep golden. Pale pastry is often doughy underneath. Let the corners get a rich brown color.

Use a knife to lift them out. Run a small knife around each cup while they’re still warm.

Make Ahead and Freezer Instructions

Spinach feta puff pastry bites are one of my favorite make-ahead appetizers. Mix the filling up to 2 days ahead and keep it covered in the fridge. You can also assemble the cups in the pan, cover them tightly and chill for up to 4 hours before baking. To freeze, fill the pastry cups, freeze the whole pan until solid, then pop the bites into a freezer bag for up to 2 months. Bake the spinach feta puff pastry bites straight from frozen at 400F, adding 4 to 6 minutes. Baked bites can also be frozen and reheated, though they’re crispest when baked fresh.

Easy Variations

  • Artichoke: Add 1/2 cup of chopped marinated artichoke hearts.
  • Sun-dried tomato: Stir in 2 tablespoons of chopped sun-dried tomatoes.
  • Spicy: Add a pinch of red pepper flakes or a little chopped jalapeno.
  • Pinwheels: Spread the filling over a whole pastry sheet, roll it up, slice and bake for a puff pastry with feta cheese and spinach pinwheel.
  • Bigger cups: Use a regular muffin pan and 12 larger squares, and bake for 20 to 22 minutes.

What This Recipe Costs

Here’s roughly what I paid this fall: puff pastry $2.50, spinach $1.80, feta $2.20, cream cheese $0.90, egg $0.30, green onions $0.40, garlic, dill and lemon about $0.50. That’s around $8.60 for 24 bites.

What to Serve with Spinach Feta Puff Pastry Bites

These are great on their own, but a little dip makes them even better. I like tzatziki, a lemony yogurt sauce or warm marinara. For a party spread, pair them with my pumpkin deviled eggs and a tray of mini BBQ chicken sliders for something heartier. Add a bowl of olives, some cut vegetables and a creamy dip, and you have an easy appetizer table that covers every craving.

Adding More Greens to Party Food

Spinach is one of the easiest ways to sneak extra vegetables into finger food, and a whole bag cooks down into just a cup of filling. Leafy greens are a smart part of any meal, and the Harvard T.H. Chan School of Public Health has a helpful overview of vegetables and fruits and why variety matters. A tray of spinach feta puff pastry bites won’t replace a salad, but it’s a nice start.

Storage and Reheating

Fridge: Store baked spinach feta puff pastry bites in an airtight container for up to 3 days.

Reheat: Warm on a baking sheet at 375F for 5 to 7 minutes to bring back the crisp pastry. Skip the microwave, which makes them soft.

Serving temperature: They’re best warm but still tasty at room temperature for about 2 hours.

Frequently Asked Questions

Can I use frozen spinach for spinach feta puff pastry bites?

Yes. Thaw 5 ounces of frozen chopped spinach and squeeze it very dry. You can skip the cooking and just mix it with the onions and garlic.

Can I use phyllo instead of puff pastry?

Yes. Layer 3 buttered sheets of phyllo, cut into squares and press into the pan. Bake about 12 to 14 minutes.

Why are my bites soggy on the bottom?

The spinach was too wet or the bites were underbaked. Squeeze the spinach well and bake until the pastry is deep golden.

Can I make them without a muffin pan?

Yes. Place the squares on a lined baking sheet, add the filling to the center and fold the corners in slightly.

What cheese can I use instead of feta?

Goat cheese or shredded mozzarella both work. Goat cheese keeps the tangy flavor, and mozzarella is milder.
