- 1 can (28 oz) crushed or diced tomatoes: $0.95
- 1/2 onion, diced: $0.12

This recipe is about $1.35 per serving! Please note that these numbers depend on season and store. I got all my ingredients at Aldi and made this meal in August. Also, I only calculated the price based on the items I used, not on the bulk I bought. You can always use the leftovers for other recipes!

Easy Vegan Sweet Potato Chili Recipe
This one pot meal takes no longer than 30 minutes to prepare! You can use a normal pot or a pressure cooker. Feel free to use a packaged chili seasoning mix or simply use the spice recommendation below. You can also add more chili to the recipe if you like it more spicy. This dish also makes a great freezer meal and you can use this for your weekly meal prep!
This budget friendly easy vegan sweet potato chili is oil free, gluten free, and great for weight loss. It is instant pot and 21 day fix friendly, yielding 4 servings (10 minutes prep time, 20 minutes cook time, 30 minutes total time) for only $1.35 per serving!
🥗 Ingredients:
- 3 diced green bell peppers
- 1 (28 oz) can of crushed or diced tomatoes
- 3 cups (about 2) cubed sweet potatoes
- 1/2 of an onion, finely diced
- 2 pressed garlic cloves
- 2 cans of kidney beans, washed and rinsed
- 1 tsp of salt
- Pepper, adjusted to your taste
- 2 tsp of cumin
- 1 tsp of paprika powder
- 1/2 tsp of chili
- 1 tsp of oregano
- Optional toppings: fresh avocado and cilantro
- Optional for Instant Pot (6 qt.): 3/4 cup of water
📝 Instructions:
- Toss all of your ingredients into a large cooking pot or your Instant Pot (I personally use the 6-quart size).
- Allow the mixture to simmer over medium heat until the potatoes become perfectly soft (about 15 to 20 minutes). Alternatively, if you are using an Instant Pot, set it to the meat/stew setting on high for 5 minutes with the valve closed.
- Finish off your bowl by topping it with sliced avocado and a sprinkle of fresh cilantro for that extra burst of flavor.
