Mango Salad: Fresh 15-Minute Summer Side for BBQs

This mango salad is my favorite way to add a pop of tropical color to a cookout. Juicy mango, crisp cucumber, sweet red pepper and fresh cilantro get tossed in a zesty lime dressing with a pinch of chili. It’s sweet, tangy and a little spicy, and it’s ready in 15 minutes with no cooking at all.

I make it for nearly every summer cookout, and it’s always the first bowl scraped clean. Six servings cost about $7, and it pairs with everything from burgers to fish tacos.

Why This Mango Salad Works

A great fruit salad for a savory meal needs balance, and that’s exactly what this one has. Mango brings natural sweetness and a soft, juicy texture. Cucumber and red pepper add crunch and freshness so the salad doesn’t feel heavy or overly sweet. Red onion and jalapeno bring a little bite, while lime juice and salt make all the flavors pop. Cilantro adds a bright, herby finish. Because there’s no mayo or dairy, this mango salad stays fresh at an outdoor party, and it happens to be vegan and gluten free, so it works for almost every guest.

Why You’ll Love This Recipe

  • Ready in 15 minutes. Just chop, whisk and toss.
  • No cooking. Perfect for hot days.
  • Goes with everything. Grilled meats, tacos, rice bowls and more.
  • Healthy and light. About 140 calories a serving.
  • Colorful. It brightens up any table.

Ingredients for Mango Salad

The ripest mangoes make the best salad. They should give slightly when pressed and smell sweet near the stem.

For the Salad

  • 3 large ripe mangoes, peeled and diced (about 4 cups / 660g)
  • 1 English cucumber, diced (300g)
  • 1 red bell pepper, diced (150g)
  • 1/2 small red onion, finely diced (50g)
  • 1 jalapeno, seeded and minced, optional (15g)
  • 1/2 cup chopped fresh cilantro (8g)
  • 1 avocado, diced, optional (150g)

For the Lime Dressing

  • 3 tablespoons fresh lime juice (45ml)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon maple syrup or agave (7g)
  • 1/2 teaspoon kosher salt (2g)
  • 1/4 teaspoon chili powder or Tajin (0.5g)

Ingredient Notes

Mangoes: Ataulfo (honey) mangoes are creamy and less stringy. Tommy Atkins mangoes are larger and easy to find. Either is great. In a pinch, use thawed frozen mango chunks, patted dry.

Cucumber: English cucumbers have thin skin and small seeds, so there’s no need to peel or seed them.

Red onion: Letting it sit in lime juice for a few minutes mellows its flavor.

Jalapeno: Remove the seeds and ribs for mild heat. Leave some in for extra kick.

Avocado: Optional, but it adds creaminess. Fold it in at the end so it doesn’t get mushy.

How to Make Mango Salad

  1. Cut the Mangoes. Slice the cheeks off each mango on either side of the pit. Score the flesh into a grid, scoop it out with a large spoon and cut any larger pieces into 1/2-inch cubes.
  2. Prep the Vegetables. Dice the cucumber and red pepper to about the same size as the mango. Finely dice the red onion and mince the jalapeno.
  3. Soften the Onion. Put the onion in a large bowl with the lime juice and salt and let it sit for 5 minutes while you chop the cilantro. This takes away the harsh bite.
  4. Make the Dressing. Whisk the olive oil, maple syrup and chili powder into the lime juice and onion.
  5. Toss. Add the mango, cucumber, pepper, jalapeno and cilantro and toss gently to coat.
  6. Finish and Serve. Fold in the avocado right before serving, if using. Taste and add more salt or lime. Serve right away or chill for up to 2 hours.

Picking Mangoes at the Store

Don’t judge a mango by its color. Some varieties stay green even when they’re perfectly ripe, while others turn red long before they’re sweet. Instead, gently squeeze the fruit. A ripe mango gives a little, like a ripe avocado. It should also smell sweet and fruity near the stem. If your mangoes are hard, leave them on the counter for 2 to 4 days, or put them in a paper bag to speed things up. Once ripe, move them to the fridge to hold them for a few more days. Avoid mangoes with large dark patches, wrinkled skin or a sour smell.

How to Cut a Mango Easily

If cutting a mango has ever frustrated you, try this method. Stand the mango on its stem end. The pit is flat and runs through the middle, so slice down about 1/4 inch to one side of the center to cut off one cheek. Repeat on the other side. Hold each cheek in your palm, skin side down, and score the flesh in a grid without cutting through the skin. Push the skin up from underneath so the cubes pop out like a hedgehog, then slice them off or scoop them out with a spoon. Trim the leftover fruit around the pit and snack on it while you work. Each large mango gives about 1 1/2 cups of cubes for your mango salad.

Tips for the Best Mango Salad

Cut everything the same size. Half-inch cubes make every bite balanced.

Don’t overdress. Mango is juicy, so the salad gets wetter as it sits. Start with less dressing and add more if needed.

Salt matters. A good pinch of salt brings out the mango’s sweetness.

Chill briefly. Thirty minutes in the fridge makes it extra refreshing.

Serve within a few hours. The cucumber releases water over time, so it’s best the day it’s made.

Easy Variations

  • Black bean: Add a can of rinsed black beans for protein and turn it into a light lunch.
  • Shrimp: Top with grilled shrimp for a fresh main dish.
  • Corn: Toss in 1 cup of grilled or roasted corn.
  • Thai style: Swap cilantro for mint and basil, add a splash of fish sauce and sprinkle with peanuts.
  • Salsa style: Dice everything smaller and serve with tortilla chips.

Mangoes are rich in vitamin C, vitamin A and fiber, and this salad adds two full servings of produce to your plate. The Harvard T.H. Chan School of Public Health explains why colorful produce matters in its guide to vegetables and fruits.

Turning Mango Salad into a Meal

With a couple of additions, this side becomes a filling lunch. Spoon it over a bowl of cooked rice, quinoa or couscous and add a can of rinsed black beans or chickpeas for protein. Grilled shrimp, chicken or a piece of seared salmon on top makes it a complete dinner in about 20 minutes. You can also stuff it into warm tortillas with shredded cabbage for quick tacos, or pile it onto crisp lettuce cups for a light, crunchy wrap. I often pack leftover mango salad in a jar with a scoop of quinoa on the bottom so the grains soak up the lime dressing by lunchtime.

What This Recipe Costs

Here’s what I paid this fall: 3 mangoes $3.00, cucumber $0.99, red bell pepper $1.25, red onion $0.30, jalapeno and cilantro $0.80, limes $0.60, olive oil and seasonings $0.30. That’s about $7.25 for 6 servings of mango salad, or roughly $1.20 each.

What to Serve with Mango Salad

This salad is one of my favorite sides for BBQ. Pile it next to grilled chicken, burgers or pork chops. It’s also wonderful with my coconut curry chickpea stew, where the cool fruit balances the warm spices. For a summer snack table, set it beside my charred corn and avocado salsa with a big bowl of chips.

Storage

Fridge: Store leftovers in an airtight container for up to 1 day. Drain off extra liquid before serving.

Make ahead: Chop the mango, pepper and onion up to 1 day ahead and store separately. Cut the cucumber and toss everything together within 2 hours of serving.

Freezing: Not recommended. The cucumber and mango turn mushy.
