Spicy tofu avocado wraps recipe

A Simple Guide to Preparing Spicy Tofu Wraps (Easy Vegan Dinner)

If you’re on the hunt for fresh, effortless tofu recipes to whip up for lunch or dinner, let me introduce you to the spicy tofu wraps that completely changed my mind about tofu. These plant-based wraps are bursting with incredible flavor, making them the absolute best easy vegan dinner recipe—and they’re fantastic for meal prep, too!

I still vividly remember my very first encounter with tofu. It was swimming inside a Thai coconut curry that I was sharing with a friend. My friend, who wasn’t even vegan, was hyping it up like it was warm white bread and the greatest thing worth eating.

Honestly? I spit that tofu out the second it hit my tongue. It was so mushy, soft, and entirely tasteless. It definitely didn’t taste like chicken, or frankly, like anything a human should be eating. That day, I carefully worked my way around the tofu in my bowl and went about my day still feeling hungry. My respect for my friend’s food opinions completely disappeared.

(Obviously, I’m totally kidding!)

Flash forward 15 years later, and here I am cooking tofu in my own kitchen. And guess what? I don’t want to throw up in my mouth anymore. In fact, my taste buds actually celebrate now, and I find myself salivating. A lot.

Transforming Tofu for Maximum Flavor

Now, to be completely fair, for this specific recipe, I absolutely did not leave the tofu soft and tasteless. I had to do a lot of “bad” things to it to draw out that incredible flavor:

  • I sliced it thinly into a gazillion tiny pieces.
  • I stir-fried those pieces in a pan with some olive oil (though if you prefer not to use olive oil for frying, coconut oil works beautifully as well).
  • I completely drowned that thing in spices.
  • I added plenty of garlic and onion.
  • Suddenly, it had amazing texture and taste!

There is true magic in processing food until it’s almost unrecognizable. It certainly did not disappoint, even for tofu.

Assembling Your Spicy Tofu Wraps

Now that you’ve essentially beaten your tofu to death with flavor, it’s time to bundle it up in a tortilla alongside some fresh, healthy ingredients:

  • Use your absolute favorite vegetables—I went with some spinach, roasted red peppers, olives, lettuce, cucumber, and tomatoes.
  • Add in an avocado sauce that genuinely makes me want to cry tears of joy.
  • Slap some savory cashew garlic sauce right on top of everything.
  • Wrap it all up.
  • Eat and enjoy!

It IS truly unbelievable. Seriously good, guys—you absolutely have to try it. Plus, if we conveniently ignore the fact that the tofu’s flavor transformation required a million degrees of heat, some heavy stir-frying, and a ton of spices, these wraps are actually incredibly healthy!

Simple Meal Prep Options

You can easily prepare this tofu recipe ahead of time for your busy week. The trick is to simply keep all the separate parts, well, completely separate. Prep your tofu, the cashew sauce, the avocado sauce, and your chopped vegetables, storing them in their own separate containers. Make sure you use whole cherry tomatoes for this, since sliced tomatoes tend to go bad rather quickly in the fridge.

Then, just assemble everything right when you’re ready to eat!

Sarah’s Budget Tips

  1. Buy Tofu in Bulk: Tofu is incredibly cheap when bought in larger blocks at local Asian markets compared to standard grocery stores.
  2. Use Seasonal Veggies: Swap out the cucumber or tomatoes for whatever crunchy vegetables are currently on sale or in season to save a few extra dollars.
  3. DIY Your Sauces: Making your own avocado and cashew garlic sauces at home using bulk nuts and ripe avocados on sale is much more budget-friendly than buying pre-made vegan dressings.
